Day 24, the Diabetic Food Stamp Project Month 2

Sunday is my day to cook.

I made a nice congee base with some rice and water with a lot of seasonings. It comes to .02 a cup for a very nice soup base.

Then I had my tiny breakfast.

Coffee with cream .17
Total .45
Carbs 27 grams

That was it. Until I began my dumpling making I had nothing else.
Gorgeous hu?

Let add up the costs.

This made 50 dumplings.

.11 each. Excellent price for delicious dumplings.

I used two cups of congee stock and cooked 6 dumplings in it for lunch. These are both the least expensive and the best I have ever made. The jelled stock and vegetable lighten them up and make the moist. I got the super thin wrappers, hard to work with, but tender.

Lunch:

Carbs 58 grams

The fruit pushed it a bit high.

I'd an Oscar party to attend so I made hash for dinner.


I browned two small potatoes with some ground beef and a lot of cabbage.

Carbs 40 grams

Ah...but I had to take something to the party. And it comes out of this budget.

I made cheddar corn.

Cheese powder, butter, and popcorn.

Cheese .50
Butter .60
Popcorn .38
Total 1.48 (there goes some surplus)
My carbs 23 grams

It was hard not to eat more but I wanted to keep it in line for the day. Cheddar corn is a gift from the gods.

Day Total 3.96, I had up to 8.43 (in a sense, explanation at end of month) but can carry over 4.47 to tomorrow

I got my fat down...but my calories were way down as well, 1,177.

I love dumplings. I particularly like that variety known as Pot Stickers. Yum!

They are all the same. If you want a potsticker flatten the bottom, brown in oil and then hit with water, cover and finish.

& I just googled "low glycemic snack ideas" since we're broke & I was feeling low. I found cottage cheese on this list

And I have a large amt of cottage cheese that I bought from Costco for a good price. I'm feeling better. I hate these hypoglycemic lows. I've googled them and I think they might be pre-diabetes. I've not been tested but I know I have hypoglycemia - all the horrible lows and the highs from food.

Anyways, just had some and feel sort of better. Hypoglycemia and diabetes are related of course and you must eat every few hours or else you get really low.

I'm cutting back on carbs too, like bread.

I didn't make the cheese powder. I went to the .99 cent store and got 4 boxes of Macaroni and cheese for a dollar (an off brand much more natural than Kraft)

I used two of the envelopes for the party popcorn saving the macaroni for a future meal.

By either using butter or popping the popcorn in oil the powder sticks perfectly and it tastes great. If you want to bump up the flavor a bit add a touch of garlic powder.

You know, I'm going to try and make homemade dumplings. It's less expensive than even buying the frozen ones in the store. I love gyoza!
