Jarred sauce and pasta rule, that along with microwaved burritos.<br />
<br />

We refuse a few extra dollars in food sustenance and as a result spend that and more in medical care.<br />

I
came to this after having done a food stamp diet for two months in the
summer in San Francisco to prepare for a benefit for the SF Food Bank.

Summer in San Francisco with masses of pasta and rice is a vastly different experience than winter in New York as a diabetic.<br />
<br />
I
came to this via Harlem Hospital. I was asked by Dr. Leaque Ahmed of
Harlem Hospital to quit my job and come 3,000 miles to NY in order to
work with the diabetes department on Stirring the Pot. He was the
conduit, making me a part of his department via PAGNY.<br />
<br />
Thrilled
to be here I began working hard and as my kitchen was (supposedly)
being built I began shopping tours and did an enormous amount of
outreach. I created our Facebook page and our blog and put in some very
long hours preparing for the program.<br />
<br />
3 months later
gross mismanagement and some very bad decision making caused the
hospital to let go of the program. Now patients may see a nutritionist
like Amrita <span class="st">Persaud, at least she told me she is
one...I never saw her degree. Rather than hands on cooking lessons that
work for the community and their budgets they get a session in an
office. </span><br />
<br />
<span class="st">I continued to run Stirring the Pot as a volunteer, hosting some cooking lessons in my home kitchen. </span><br />
<br />
<span class="st">I felt I had made a commitment to the people of Harlem, not the hospital. </span><br />
<br />
<span class="st">When
January came and I looked at my pledge to do the food stamp budget as a
diabetic I decided to go ahead with it. I knew that I would learn more,
and I did. </span><br />
<br />
<span class="st">At the beginning I
was raring to go, I was as creative as I had ever been and I worked it.
I made ahead foods to tide me over. I sought out pig tails and other
low cost items. </span><br />
<br />
<span class="st">By the end of month 2 I was hungry and tired. </span><br />
<br />
<span class="st">I ate the same thing 3 days in a row, not because I had no other choice but because I was bored and depressed. </span><br />
<br />
<span class="st">It impacted my body.</span><br />
<br />
<span class="st">I lost two inches in my chest, 1 in my arms and close to two in my thighs, muscle loss, not fat. </span><br />
<br />
<span class="st">As
my muscle went down my body fat percentage went up. I began at 11% fat
and am now at almost 17% fat. Despite a weight loss of more than 8 lbs
my waist is slightly bigger. </span><br />
<br />
<span class="st">My
cholesterol has risen and the ratio is way off. I have elevated
triglycerides, free testosterone levels are low despite normal/high
testosterone over all. </span><br />
<br />
<span class="st">My
sodium is quite fine despite precious little dietary sodium (I need salt
so I took a supplement) my vitamin D levels are still above normal and
my Iron shot off the charts. </span><br />
<br />
<span class="st">This
tells me that were I to stay on this high meat/low carb what few
vegetables I could afford way of eating I would be sick before long. </span><br />
<br />
<span class="st">In America we love to blame poor people for making bad choices but they cannot afford to make good choices. </span><br />
<br />
<span class="st">You
can get 4 boxes of off label Macaroni and Cheese for .99 at the .99
store. You can get 6 to 8 top ramen for one dollar. Banquet routinely
puts pot pies and 'dinners' on sale for .99 at the beginning of the
month. </span><br />
<br />
<span class="st">Garbage food is affordable for most of us. </span><br />
<br />
<span class="st">Soup
kitchens and other feeding programs are strained beyond words. They
rely on donations (often of cheap carbs) to sustain people. Those cheap
carbs are killing them. </span><br />
<br />

paper I did okay. My carbs were right in line for what I should have
had over a 2 month period. I was low in certain nutrients but I have
enough stored D from the sun. </span><br />

got way too many calories from fat. Fat is pale blue, carbs purple and
protein yellow. As the time progressed I relied more heavily on butter
to both flavor and get more calories. Costco made butter cheap at about
two bucks a pound. </span><br />

<span class="st">Even when I made the wrong choices I KNEW I was making the wrong choices but was too hungry and tired to care. </span><br />
<br />
<span class="st">Last night I had an entire head of broccoli, something I could never have afforded on the food stamp budget. </span><br />
<br />
<span class="st">The poor cannot afford good food, Can we afford the health care cost of not providing it. </span><br />

Because of my skill and planning I was not eating Swanson dinners or frozen pizza as so many others do. I ate well. It may have been a bit dull and monotonous, but there are worse things.<br />

It was pretty lackluster end to the month.<br />
<br />
My understanding has grown. I did EVERYTHING that people say food stamp recipients should do. I grew herbs on the windowsill, I shopped the sales, I baked my own bread, made my own dumplings and took every single measure I could to get both the calories and the nutrition I need.<br />
<br />
The truth is that on this budget you CANNOT get both the calories and the nutrition needed to sustain healthfully. Those few dollars we take out of food will be paid in health care costs.<br />
<br />
I should have my blood work in a few days to share with you.<br />
<br />
For those last 3 days I had 1,009 calories per day. While it is true, I had more food in the house, food that was paid for and I could have eaten more. I found I no longer cared. My drive to make effort had been starved out of me.<br />
<br />
I lost 8 pounds, two inches in my chest (while working out daily) so a lot of it was muscle loss.<br />
<br />
I will tally my nutrition for the two months...but there is no question it suffered.<br />

My first big meal after coming off the project. 3 ounces of ham, 3 flatbread, a small bit of mac and cheese an ENTIRE avocado with two Roma tomatoes and goat Feta. The meal cost over three dollars, 3/4 of what the average food stamp recipient can spend a day.<br />

4.25 plus 4.47 is 8.72 ...which is what I had (theoretically if I chose only from pantry items) This leaves me with an extra 6.42 to apply to what is in my pantry. <br />

This past week I had an interesting experience. I got a call about catering a dinner, last minute for a couple who were getting married/sort of a pre-wedding bachelor party type thing. The food was already at the party site and the caterer had walked out when he learned the party was to be for two men getting married. Two men who had been together for the past 40 years. <br />

In 2013 on the East Side of Manhattan this was shocking. When I read stories about bakeries in podunk towns refusing cakes I always think...well it's because they are in _______ and ________ has not caught up to the rest of the world.<br />

I went, took stock and prepared I later learned a vastly different menu than the original, but one that made the hosts and guests very happy.<br />

Thinking about this....back before I went to the Dominican Republic to cook for a year I had done a number of bachelorette parties, from tacky as all get out to very upscale.<br />

A type I diabetic would take 8 units of insulin. A type II would monitor their blood sugar for signs of crisis.<br />

However when most of the carbs are from fiber and vegetables the changes of them being slow to digest and burn are very good and often crisis is averted.<br />
<br />
Those same carbs as cake might have meant hospital. For the entire day I was only a few grams over.<br />
<br />
How did I do with Money? 4.60 and I had a potential 8.78 to use. I still have 4.18 to carry over. Calories 1,582, fewer calories from fat, therefore fewer calories. <br />

I was asked what had changed since I began this and that is the biggest change.<br />

I crave fat and salt and am getting many more calories from fat than I used to.<br />

When I began I was craving salad and vegetables, even a few weeks into it I wanted nothing more than a head of crisp broccoli and now if it isn't fatty and salty I have less desire for it.<br />

I had my usual coffee with cream this morning along with a flat bread and a serving of soup.<br />

I thought the play very well written, despite the amateur performances, with the exception of Andrew J. Langton as the father...great job, which stood out strongly against our two incredibly bad female leads. 2 of the actors were also producers and I am thinking this is the only way they could get cast.<br />

Getting home at close to midnight I am happy to say I resisted the temptation to eat more food.<br />
<br />
So why do the poor eat so much fat?<br />
<br />
We ask it over and over again. What is wrong with 'those people' don't they know better?<br />
<br />
Now that I am one of 'those people' I can tell you. Fat satiates, more than fiber, more than anything. Those days I have more than 50% of my calories from fat I am not hungry.<br />
<br />
I know better, I say I am going to try and again and again I am drawn to the butter.<br />
<br />
Let's look at my total. 3.80 out of a potential 9.28, leaving me 5.48 to carry over.<br />

Added a cup of water and brought it to a boil, turned low, put on the lid and let it simmer for 20 minutes, turned off the heat and let rest and then I ate half with some crackers and cheese alongside.<br />

Same principal as the book, you find bits of what you have and put them in a soup pot. I pureed this one. I find it best if you have onion, garlic and potato for texture and flavor.<br />

I love Dim Sum. I tried not to overdo on the dumplings because of the wrappers, but had rib tips and roast duck with impunity. This is approximate but I had at least 1,000 calories.<br />

I taught a <a href="http://chefshomesecrets.blogspot.com/2012/12/fusion-on-fly-classes.html">food improvisation</a> class last night. These are the most popular and most fun class taught. So had had a few tastes, but the dim sum had me so full, other than to make sure the food was excellent (it was) I did not eat.<br />

One great recipe came out of the mix I will share today.<br />

Mushroom Coconut Soup<br />
<br />1 cup dried mixed mushroom<br />3 cups water <br />Rehydrate by putting mushrooms in water, bring to a boil then simmer<br />Add in <br />
Stalks from 1 lb mustard greens (swiss chard or any other stalk would work just as well)<br />1 quart beef stock<br />Puree<br />1 small can coconut milk<br />4 large canned poblano chilies<br />Mix with mushroom mix<br />Scoop out mushroom and mustard solids <br />
Puree solids<br /><br />Add freshly ground pepper and about a teaspoon of beef concentrate, let simmer for approximately 30 minutes.<br />

In other words the count could easily be off by a couple hundred calories. <br />

I did not topple my carb count yet I went way higher with everything, even getting E and D which I rarely do.<br />

Because the meal was a Valentine's gift my budget was unharmed. I also managed 2,253 calories without a lot of cheap carbs. Carl spent about 16.00 for the ingredients for that meal, making one amazing meal an extra 8 dollars per day.<br />
<br />
Something to think about.<br />

Many cultures have a version of ham and cheese. In France they put the ham and cheese and a croissant for breakfast or lunch. It is a great day starter so it makes sense.<br />

I came up with a newish one. I used the very dense dough from yesterday, rolled it as thin as I could and put 3 ounces of the ham I cured along with one ounce of shredded cheddar. I brushed with butter and baked in a hot oven.<br />

It was a very good meal.<br />

The bread might have been too dense for some as it was all whole grain, with oats, flax and stone ground whole wheat. However I lvoed it and the fiber kick is a very good thing.<br />

I also had my coffee and a banana with peanut butter.<br />

I didn't intend to, but I needed to use the last of the sauce before it turned. Today I added a smoked sausage to the mix. Wow was it delicious and my tiny pasta filling with that sausage link. <br />
